Professor Traud has long had a passion for the hospitality profession. After practicing law, Professor Traud followed his dreams of becoming a chef and eventually graduated from Johnson and Wales with a degree in Culinary Arts. Upon graduation, Professor Traud returned to Philadelphia and was a member of James Beard Award Winning Chef Marc Vetri's Osteria opening staff. Professor Traud spent two years at Osteria during which he was sous chef prior to spending over a year at Vetri Ristorante. During his years with the Vetri Corporation, Professor Traud worked for 2 James Beard Award winning chefs and both restaurants were rated a top Italian restaurant in Philadelphia and the nation.

Professor Traud has experience cooking in Italy and South Korea. His research interests are Hospitality Law, Italian cuisine and the implementation of Korean cuisine in the United States.
